Description

Ingredients

  • 12 tablespoons butter
  • ½ cup granulated sugar
  • 1 large egg (room temperature)
  • 1 1/2 teaspoons almond extract (or to taste; vanilla extract may be substituted or added)
  • 2 cups all-purpose flour
  • Sliced almonds (as needed)

Instructions

  1. To the bowl of a stand mixer fitted with the paddle attachment, add the butter and sugar. Cream until light and fluffy, about 3-4 minutes. Scrape down the sides of the bowl.
  2. Add the egg and almond extract. Beat to incorporate, about 1 minute. Scrape down the sides of the bowl.
  3. Add the flour and beat on low speed until a smooth dough forms.
  4. Pat the dough into a ball, wrap in plastic wrap, and refrigerate for 1 hour.
  5. Preheat oven to 350F and line 3 baking sheets with parchment paper.
  6. Lightly flour your countertop, place the chilled dough on it, and roll out to about 1/4-inch thickness.
  7. Cut the dough into round discs using a 2 1/2-inch cookie cutter. Place discs onto baking sheets, adding no more than 12 per sheet.
  8. Place 5 almond slices into the center of each disc to create a sand dollar appearance.
  9. Create small holes on each piece using a straw or an exacto knife. Remove excess dough with a toothpick.
  10. Bake for 10-12 minutes or until the edges are lightly golden brown.
  11. Allow cookies to cool on the baking sheet before transferring to wire racks.
  12. Optionally dust with powdered sugar or cinnamon sugar before serving.

  • For less stickiness, add flour while rolling out the dough.
