Description

Salmon Wellington with Horseradish Cream is a sophisticated dish featuring fresh salmon fillets wrapped in puff pastry with a creamy spinach and herb cheese filling.


Ingredients

  • 500 g salmon fillets (4 pieces, 125g each)
  • 100 g baby spinach leaves
  • 100 g cream cheese
  • 1 egg yolk
  • 1 tbsp horseradish
  • Small bunch of fresh dill, finely diced
  • 2 small spring onions, diced
  • Pinch of nutmeg
  • Sea salt and black pepper, to taste
  • 4 tsp garlic or herb butter
  • 350 g ready-rolled puff pastry
  • 1 egg, beaten (for brushing)
  • 1 tbsp sesame seeds
  • 150 g cream cheese
  • 23 tbsp horseradish
  • Lemon juice, to taste
  • Salt and black pepper, to season

Instructions

  1. Remove the skin from the salmon fillets and pat them dry. Chill until needed. Preheat your oven to 200°C (400°F, Gas 6) and line a baking tray with parchment paper.
  2. Rinse the baby spinach and place it in a heatproof bowl. Pour boiling water over it for 30 seconds. Drain and immerse in cold water. Squeeze out excess moisture and finely dice the spinach.
  3. In a bowl, combine the diced spinach, cream cheese, egg yolk, dill, spring onions, and nutmeg. Season with salt and black pepper, and mix well.
  4. Roll out the puff pastry and cut into four rectangles. Spread garlic or herb butter on each rectangle. Place a salmon fillet on each, spoon the cheese filling on top, and fold the pastry around the fillets. Seal the ends tightly.
  5. Arrange the parcels on the baking tray. Brush with beaten egg and sprinkle with sesame seeds. Bake for 30-35 minutes until golden brown.
  6. Prepare the horseradish sauce by mixing cream cheese, horseradish, and lemon juice until smooth. Season with salt and pepper.
  7. Serve the Salmon Wellington hot with horseradish cream sauce and a fresh green salad.
