- 250 g (2 cups) Pasta (fusilli or penne)
- 300 g (2 cups) Cherry Tomatoes, halved
- 200 g (7 oz) Mozzarella Cheese, torn
- 1 cup Fresh Basil, torn
- 60 ml (¼ cup) Olive Oil, extra virgin
- 30 ml (2 tablespoons) Balsamic Vinegar
- Salt and Pepper, to taste
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8-10 minutes.
- Drain and cool: Once cooked, drain the pasta in a colander and rinse it under cold water to stop the cooking process.
- Prepare the vegetables: While the pasta cools, halve the cherry tomatoes and tear the basil leaves.
- Mix the dressing: In a small bowl, whisk together olive oil and balsamic vinegar. Season with salt and pepper to taste.
- Combine ingredients: In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, torn mozzarella, and fresh basil. Drizzle the dressing over the salad.
- Toss and serve: Gently toss the salad until mixed well, serve immediately or chill for 30 minutes to allow flavors to meld.
