Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1 cup pumpkin puree
  • 1/2 cup melted butter
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1/3 cup sugar (for swirl mix)
  • 2 teaspoons cinnamon (for swirl mix)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a separate bowl, combine the pumpkin puree, melted butter, sugar, eggs, and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix.
  5. Pour half of the batter into the prepared loaf pan.
  6. In a small bowl, mix the 1/3 cup sugar and 2 teaspoons cinnamon for the swirl. Sprinkle half of this mixture over the batter in the pan.
  7. Add the remaining batter on top of the first layer.
  8. Sprinkle the rest of the swirl mixture over the top of the batter.
  9. Use a knife to gently swirl the spice mixture into the batter with an ‘S’ motion, creating a marbled effect.
  10. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
