- 1 teaspoon baking soda

- 1 cup pumpkin puree
- 1/2 cup melted butter
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla
- 1/3 cup sugar (for swirl mix)
- 2 teaspoons cinnamon (for swirl mix)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and ginger.
- In a separate bowl, combine the pumpkin puree, melted butter, sugar, eggs, and vanilla until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Do not overmix.
- Pour half of the batter into the prepared loaf pan.
- In a small bowl, mix the 1/3 cup sugar and 2 teaspoons cinnamon for the swirl. Sprinkle half of this mixture over the batter in the pan.
- Add the remaining batter on top of the first layer.
- Sprinkle the rest of the swirl mixture over the top of the batter.
- Use a knife to gently swirl the spice mixture into the batter with an ‘S’ motion, creating a marbled effect.
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

- For a dairy-free version, substitute the butter with an equal amount of vegetable oil.
