- 1 1/4 cups granulated sugar
- 1 teaspoon baking soda

- 2 large eggs, at room temperature
- 1 cup pumpkin puree

Instructions
- Begin by preheating your oven to 350°F (175°C).
- In a large bowl, thoroughly mix the all-purpose flour, granulated sugar, baking soda, baking powder, salt, nutmeg, cinnamon, cloves, ginger, and allspice until well combined.
- Make a well in the center of the dry ingredients and add the eggs, canola oil, milk, vanilla extract, and pumpkin puree. Whisk the wet ingredients separately, then fold them into the dry mix until just incorporated.
- Line a loaf pan with parchment paper.
- Pour the batter into the prepared loaf pan. Bake for 30 minutes.
- After 30 minutes, loosely cover the loaf pan with tin foil and bake for an additional 20 minutes, or until a knife inserted into the center comes out clean.
- Remove the pumpkin bread from the oven and cool in the pan for 10-15 minutes before transferring to a wire rack.
