Healthy Protein Chocolate Covered Cookie Dough Bites
Ingredients

- 1 cup cottage cheese
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- 3/4 cup almond flour
- 1 1/2 scoops vanilla protein powder
- 2 tbsp mini dark chocolate chips
- 1 cup dark chocolate chips
- 1 tsp coconut oil
Instructions
- In a food processor or blender, combine the cottage cheese, maple syrup, and vanilla extract. Blend until smooth and creamy.
- Transfer the mixture to a bowl, then add almond flour and vanilla protein powder. Stir until fully combined.
- Fold in mini dark chocolate chips gently.
- Scoop portions into a mini muffin pan lined with muffin liners. Freeze for about 1 hour.
- Melt dark chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Dip each chilled cookie dough bite into the melted chocolate and place on a lined baking sheet. Optionally, sprinkle flaky sea salt on top.
- Return the bites to the freezer for 15-20 minutes to allow the chocolate to harden.
Notes
- Store in the refrigerator for up to a week.
- Use any protein powder flavor you prefer.
- Adjust sweetness by adding more or less maple syrup.
