Pomegranate-Glazed Chicken with Herbs Recipe

- 4 boneless, skinless chicken breasts
- 1/2 cup pomegranate juice
- 1/4 cup honey
- 2 tablespoons soy sauce (low-sodium preferred)
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- 1 teaspoon fresh ginger (grated)
- Salt and pepper (to taste)
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
- 1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary)
- 1/4 cup pomegranate seeds (for garnish)
- Fresh herbs (like parsley or cilantro, for garnish)
Instructions
- In a bowl, combine the pomegranate juice, honey, soy sauce, olive oil, minced garlic, grated ginger, salt, pepper, thyme, and rosemary. Whisk until well combined.
- Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).
- Preheat your oven to 400°F (200°C).
- In a large oven-safe skillet, heat a little olive oil over medium-high heat. Remove the chicken from the marinade, reserving the marinade for later. Sear the chicken breasts for about 3–4 minutes on each side until golden brown.
- Pour the reserved marinade over the chicken and transfer the skillet to the preheated oven. Bake for 15–20 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 75°C).
- Once the chicken is cooked, remove it from the oven and let it rest for a few minutes. The glaze will thicken slightly as it cools.
- Slice the chicken and arrange it on a serving platter. Drizzle with the pomegranate glaze and sprinkle with pomegranate seeds and fresh herbs.
- Serve your Pomegranate-Glazed Chicken warm, accompanied by your favorite sides, such as rice, quinoa, or roasted vegetables.
