Ingredients

  • Boneless, skinless chicken breasts
  • Freshly grated Parmesan cheese
  • Cream cheese
  • Eggs
  • Almond flour
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, cut the chicken breasts into chunks. Use a food processor to pulse until the chicken is finely chopped but not pureed.
  3. In the same bowl, add the cream cheese, half of the grated Parmesan, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. Scoop a generous amount of the chicken mixture and form it into a ball. Repeat until all the mixture is used, placing each ball on a baking sheet lined with parchment paper.
  5. In a separate bowl, whisk the eggs. In another bowl, combine almond flour and the remaining Parmesan cheese. Dip each chicken ball into the egg, then roll it in the almond flour mixture until fully coated.
  6. Place the coated chicken bombs back onto the baking sheet and bake for about 25-30 minutes, or until golden brown and cooked through. The internal temperature of the chicken should reach 165°F (74°C).
  7. Once baked, allow them to cool for a few minutes before serving. Enjoy them warm with your favorite dipping sauce!
