  • 1/2 cup Melted Butter (or plant-based butter)
  • 1 cup Buttermilk (or regular milk with vinegar)
  • 1/2 cup Fresh Orange Juice
  • 1 tablespoon Fresh Orange Zest
  • 1 teaspoon Vanilla Extract (preferably pure)
  • 1 cup Chopped Dates (or raisins/dried apricots)
  • 1/2 cup Nuts (Walnuts or Pecans) (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare the muffin tin.
  2. In a medium bowl, mix the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon.
  3. Whisk the eggs in a large bowl, then add melted butter, buttermilk, orange juice, orange zest, and vanilla extract. Mix well.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just mixed.
  5. Fold in the chopped dates and optional nuts until evenly distributed.
  6. Fill each muffin cup about two-thirds full with the batter.
  7. Bake for 18 to 22 minutes until golden brown; a toothpick should come out clean.
  8. Let the muffins cool in the tin for 5 minutes and then transfer to a wire rack.
