- 1 cup Buttermilk (or regular milk with vinegar)
- 1/2 cup Fresh Orange Juice
- 1 tablespoon Fresh Orange Zest
- 1 teaspoon Vanilla Extract (preferably pure)
- 1 cup Chopped Dates (or raisins/dried apricots)
- 1/2 cup Nuts (Walnuts or Pecans) (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare the muffin tin.
- In a medium bowl, mix the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon.
- Whisk the eggs in a large bowl, then add melted butter, buttermilk, orange juice, orange zest, and vanilla extract. Mix well.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just mixed.
- Fold in the chopped dates and optional nuts until evenly distributed.
- Fill each muffin cup about two-thirds full with the batter.
- Bake for 18 to 22 minutes until golden brown; a toothpick should come out clean.
- Let the muffins cool in the tin for 5 minutes and then transfer to a wire rack.
