- 3 medium ripe bananas (about 375 g peeled; roughly 1 ½ cups mashed)
- 115 g (½ cup) unsalted butter, melted
- 150 g (¾ cup packed) light brown sugar
- 1 large egg, room temperature
- 1 tsp (5 ml) vanilla extract
- 60 g (¼ cup) Greek yogurt or sour cream (optional)
- 75 g (½ cup) chocolate chips or chopped walnuts (optional)
Instructions
- Preheat oven to 175°C (350°F) and line a 23 x 13 cm (9 x 5 inch) loaf pan with parchment paper.
- Mash 3 ripe bananas in a large bowl, then mix in melted butter and Greek yogurt until glossy.
- Whisk in brown sugar, egg, and vanilla extract until uniform.
- In a separate bowl, combine flour, baking soda, salt, and cinnamon.
- Fold dry ingredients into the wet mixture until just combined, avoiding overmixing.
- If using, fold in chocolate chips or nuts gently.
- Transfer batter to the prepared pan and smooth the top.
- Bake for 45–55 minutes, rotating halfway, until a toothpick comes out with moist crumbs.
- Cool in pan for 10 minutes, then lift out and cool for an additional 30 minutes before slicing.
Notes
Use very ripe bananas for best flavor. Avoid overmixing to ensure a tender loaf.
