Description

Ingredients

  • 250 g (2 cups) all-purpose flour
  • 1 tsp (5 g) baking soda
  • 1 tsp kosher salt
  • 1 tsp ground cinnamon (optional)
  • 3 medium ripe bananas (about 375 g peeled; roughly 1 ½ cups mashed)
  • 115 g (½ cup) unsalted butter, melted
  • 150 g (¾ cup packed) light brown sugar
  • 1 large egg, room temperature
  • 1 tsp (5 ml) vanilla extract
  • 60 g (¼ cup) Greek yogurt or sour cream (optional)
  • 75 g (½ cup) chocolate chips or chopped walnuts (optional)

Instructions

  1. Preheat oven to 175°C (350°F) and line a 23 x 13 cm (9 x 5 inch) loaf pan with parchment paper.
  2. Mash 3 ripe bananas in a large bowl, then mix in melted butter and Greek yogurt until glossy.
  3. Whisk in brown sugar, egg, and vanilla extract until uniform.
  4. In a separate bowl, combine flour, baking soda, salt, and cinnamon.
  5. Fold dry ingredients into the wet mixture until just combined, avoiding overmixing.
  6. If using, fold in chocolate chips or nuts gently.
  7. Transfer batter to the prepared pan and smooth the top.
  8. Bake for 45–55 minutes, rotating halfway, until a toothpick comes out with moist crumbs.
  9. Cool in pan for 10 minutes, then lift out and cool for an additional 30 minutes before slicing.

Notes

Use very ripe bananas for best flavor. Avoid overmixing to ensure a tender loaf.
