Instructions

  1. In a mixing bowl, combine 1 cup of all-purpose flour, 1/4 cup of granulated sugar, and 1/4 cup of unsalted butter. Use a fork or pastry cutter to blend the ingredients until the mixture resembles coarse crumbs.
  2. Add 1 egg and mix until the dough comes together. The dough should be slightly sticky but manageable.
  3. Lightly flour your work surface and roll out the dough to about 1/8-inch thickness. Use a round cutter or a glass to cut out circles that will fit into your muffin tin, about 4 inches in diameter.
  4. Gently press the dough circles into the muffin tin, shaping them to form mini pie crusts. Preheat your oven to 350°F (175°C) while you prepare the filling.
  5. In a separate bowl, whisk together 1 cup of corn syrup, 1/2 cup of brown sugar, 1 teaspoon of vanilla extract, and 1/4 teaspoon of salt until smooth.
  6. Stir in 1 cup of chopped pecans, ensuring they are well coated with the syrup mixture.
  7. Spoon the pecan filling evenly into each prepared mini pie crust, filling them just to the top.
  8. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the filling is set and the crust is golden brown.
