Instructions
- In a mixing bowl, combine 2 cups of pancake mix with 1 ¼ cups of milk and 1 egg. Stir until just combined; a few lumps are perfectly fine!
- Preheat a non-stick skillet over medium heat. Pour about ¼ cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 1-2 minutes until golden brown. Repeat until all the batter is used.
- In a separate pan, cook your beef patties over medium heat until they reach your desired doneness. This usually takes about 4-5 minutes per side. If you’re using thick patties, you may need a little longer.
- Take one pancake and place a beef patty on top, followed by a slice of cheese. Drizzle with maple syrup for that signature Mcgriddle flavor. Top with another pancake to complete the muffin.
