Delicious Maple-Glazed Chicken with Sweet Potatoes for a Cozy Fall Dinner

- 4 boneless skinless chicken breasts
- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 1/4 cup olive oil
- 1/4 cup pure maple syrup
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 2 teaspoons minced garlic
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon paprika
- Optional: fresh thyme or rosemary for garnish
Instructions
- Set oven to 400°F (200°C).
- Peel and cube sweet potatoes into 1-inch pieces, then spread onto half of a large sheet pan.
- In a bowl, whisk olive oil, maple syrup, Dijon mustard, apple cider vinegar, garlic, salt, pepper, and paprika until smooth.
- Drizzle half the glaze over the sweet potatoes and toss to coat.
- Place chicken breasts on the other half of the pan and brush with the remaining glaze.
- Roast for 25–30 minutes, flipping sweet potatoes halfway through. Chicken should reach 165°F (75°C).
- Garnish with fresh herbs and serve warm with pan juices drizzled over the top.
