Delicious Maple-Glazed Chicken with Sweet Potatoes for a Cozy Fall Dinner


Ingredients

  • 4 boneless skinless chicken breasts
  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1/4 cup pure maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon paprika
  • Optional: fresh thyme or rosemary for garnish

Instructions

  1. Set oven to 400°F (200°C).
  2. Peel and cube sweet potatoes into 1-inch pieces, then spread onto half of a large sheet pan.
  3. In a bowl, whisk olive oil, maple syrup, Dijon mustard, apple cider vinegar, garlic, salt, pepper, and paprika until smooth.
  4. Drizzle half the glaze over the sweet potatoes and toss to coat.
  5. Place chicken breasts on the other half of the pan and brush with the remaining glaze.
  6. Roast for 25–30 minutes, flipping sweet potatoes halfway through. Chicken should reach 165°F (75°C).
  7. Garnish with fresh herbs and serve warm with pan juices drizzled over the top.
