Description

This Manicotti Alfredo Recipe is a creamy, cheesy, and comforting pasta bake filled with chicken and cheese, topped with luscious Alfredo sauce, and baked until golden. Perfect for family dinners, holidays, or potlucks, this dish combines elegance with comfort in every bite.

Ingredients

Scale
  • 12 manicotti shells, cooked al dente
  • 2 cups shredded cooked chicken (rotisserie chicken works well)
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup Parmesan cheese, grated
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 3 cups Alfredo sauce (store-bought or homemade)
  • 2 tbsp butter
  • Fresh parsley, chopped, for garnish
  • Optional: spinach, mushrooms, or sun-dried tomatoes

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Boil manicotti shells until al dente. Drain and set aside to cool slightly.
  3. In a bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, and shredded chicken. Mix until smooth to prepare the filling.
  4. Use a piping bag or a spoon to fill the manicotti shells with the chicken-cheese mixture.
  5. Spread a thin layer of Alfredo sauce on the bottom of the prepared baking dish.
  6. Arrange the filled manicotti shells on top of the sauce.
  7. Pour the remaining Alfredo sauce over the manicotti shells.
  8. Sprinkle the top with mozzarella and Parmesan cheese.
  9. Cover the dish with aluminum foil and bake for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes, or until the top is golden and bubbly.
  11. Garnish with fresh parsley before serving hot.

Notes

  • Use whole milk ricotta for the creamiest filling.
  • Do not overcook the pasta shells; they should remain firm enough for stuffing.
  • Warm the Alfredo sauce slightly before pouring to ensure it spreads evenly.
  • Adding a dash of nutmeg to the Alfredo sauce can provide a deeper flavor.
  • You can assemble the manicotti a day in advance and bake it before serving for convenience.
