- 1/2 cup Vanilla coconut yogurt (Substitute with any plant-based yogurt for vegan option.)
- 1 whole Chopped mango (for topping) (Optional but highly recommended.)
Instructions
- In a mixing bowl, whisk together your choice of milk, maple syrup, vanilla extract, and chia seeds until smooth. Allow this mixture to rest for about 10-15 minutes at room temperature, stirring occasionally, until it thickens to a pudding-like consistency.
- While the chia pudding thickens, peel and chop the pink dragon fruit and Alphonso mango. Place the chopped fruits into a blender and process until smooth.
- In individual serving dishes or a large bowl, start with a layer of the thick chia pudding as the base. Then, spoon the blended dragon fruit and mango puree over the chia pudding.
- Top each serving with chopped mango to enhance the tropical experience and add a pop of color. Drizzle a little extra maple syrup on top for sweetness, or chill the pudding for 20-30 minutes before serving.
