  • 1 whole Pink dragon fruit (Can substitute with kiwi or passionfruit.)
  • 1 whole Alphonso mango (Opt for ripe fruits for the best results.)
  • 1/2 cup Vanilla coconut yogurt (Substitute with any plant-based yogurt for vegan option.)
  • 1 whole Chopped mango (for topping) (Optional but highly recommended.)

Instructions

  1. In a mixing bowl, whisk together your choice of milk, maple syrup, vanilla extract, and chia seeds until smooth. Allow this mixture to rest for about 10-15 minutes at room temperature, stirring occasionally, until it thickens to a pudding-like consistency.
  2. While the chia pudding thickens, peel and chop the pink dragon fruit and Alphonso mango. Place the chopped fruits into a blender and process until smooth.
  3. In individual serving dishes or a large bowl, start with a layer of the thick chia pudding as the base. Then, spoon the blended dragon fruit and mango puree over the chia pudding.
