A quick and healthy take on the classic bacon cheeseburger in casserole form, perfect for busy weeknights.
Ingredients

- 1 lb ground beef
- 6 slices bacon
- 4 large eggs
- 8 oz cream cheese
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- Salt and pepper to taste
- Mustard and ketchup (optional)
- Diced bell peppers (optional)
- Mushrooms (optional)
Instructions
- Cook the bacon in a skillet until crispy, about 5 minutes. Remove and crumble when cool.
- In the same skillet, brown the ground beef with onion and garlic for about 10 minutes. Stir in smoked paprika, garlic powder, salt, and pepper.
- Lower the heat and mix in the cream cheese until melted. Add the crumbled bacon back into the mixture and spread in a greased 9×13 baking dish.
- In a bowl, whisk together the eggs, heavy cream, mustard, and ketchup (if using). Add half of the cheddar and mozzarella cheeses.
- Pour the egg mixture over the beef mixture in the baking dish and top with remaining cheeses.
- Bake in a preheated oven at 350°F (175°C) for 25-30 minutes until set and golden.
- Let cool slightly before slicing and serve with pickles or parsley if desired.
Notes
Feel free to customize the ingredients as desired. Use aluminum foil to cover if the top browns too quickly.
