  • 1/4 cup sour cream (optional for added creaminess)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 1/2 cup all-purpose flour
  • Vegetable oil for frying

Instructions

  1. In a large mixing bowl, thoroughly combine the mashed potatoes, shredded cheddar cheese, crumbled bacon, chopped green onions, sour cream (if using), garlic powder, salt, and black pepper until the mixture is uniform.
  2. Using your hands, form the potato mixture into compact, uniform 1-inch balls.
  3. Prepare three shallow bowls: one with all-purpose flour, one with beaten eggs, and one with panko breadcrumbs.
  4. Roll each potato ball in the flour, dip into the beaten eggs, and then roll in the panko breadcrumbs.
  5. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  6. Place the breaded potato balls into the hot oil in batches, frying each for 2-3 minutes until golden brown.
  7. Remove the fried bites with a slotted spoon and drain on paper towels. Serve warm with dipping sauces.
