Description

These delightful Lemon Snowball Cookies are bursting with citrus flavor and have a melt-in-your-mouth texture, coated in powdered sugar for a sweet finish.


Ingredients

  • 1 cup unsalted butter, softened
  • 1.5 cups powdered sugar, divided
  • 1 tablespoon fresh lemon juice
  • 1 item zest of 1 lemon
  • 1.5 teaspoons lemon extract
  • 2.25 cups all-purpose flour, spooned & leveled
  • 0.25 teaspoon salt
  • 34 drops yellow food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. In the bowl of a stand mixer fitted with the paddle attachment, cream together the softened butter and ½ cup of the powdered sugar for 1-2 minutes until well combined.
  3. Add the fresh lemon juice, lemon zest, and lemon extract, mixing until fully incorporated.
  4. If using food coloring, add a few drops and mix until blended.
  5. Using a 1-tablespoon cookie scoop, scoop out the dough, roll it into balls, and place them on the prepared baking sheets.
  6. Bake the cookies in separate batches for 14-15 minutes until set but not overly browned.
  7. Allow cookies to cool slightly for about 5-10 minutes, then roll each warm cookie in the remaining powdered sugar. Let them cool completely.
