Instructions
- In a large mixing bowl, combine the rolled oats, almond butter, honey, lemon juice, lemon zest, poppy seeds, vanilla extract, and salt.
- Stir until all ingredients are well combined.
- Using your hands, roll the mixture into small balls, about 1 inch in diameter.
- If the mixture is too sticky, wet your hands slightly to make rolling easier.
- Place the energy bites on a baking sheet or plate lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Once chilled, transfer the energy bites to an airtight container.
- Store in the refrigerator for up to 1 week or in the freezer for up to 3 months.
