Description

Ingredients

  • 1 lb mild Italian sausage (removed from casing)
  • ½ lb lean ground beef
  • 1 small onion, finely minced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 28-ounce can diced tomatoes with juices
  • 4 cups chicken stock
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 9 lasagna noodles, broken into bite-sized pieces
  • ½ cup heavy cream (optional)
  • 1 cup ricotta cheese
  • ½ cup minced fresh basil
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 1 clove garlic, finely minced
  • Pinch of salt
  • Pinch of pepper

Instructions

  1. Remove the Italian sausage from its casing and add it along with the ground beef to a large soup pot over medium-high heat. Cook until the meat is well browned, breaking it up with a spoon as it cooks.
  2. Add the finely minced onion to the pot and cook until translucent, about 3 minutes. Then add the minced garlic and tomato paste, cooking until the tomato paste darkens and releases a sweet aroma, approximately 2 minutes.
  3. Pour in the chicken stock, diced tomatoes with their juices, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  4. Stir in the broken lasagna noodles, then reduce heat to low. Cover the pot and let the soup simmer until the noodles are tender, about 15 minutes.
  5. While the soup simmers, combine the ricotta, minced basil, Parmesan, mozzarella, minced garlic, salt, and pepper in a medium bowl. Mix thoroughly to combine all flavors.
  6. Remove the soup from heat and stir in the heavy cream for richness (optional). Serve each bowl topped generously with the creamy basil ricotta mixture and garnish with additional basil leaves if desired.
