- 4 medium zucchini, spiralized
- 2 links Kiolbassa sausage, sliced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 2 cloves minced garlic
- 1 teaspoon Italian seasoning
- 1 cup fresh spinach
- 1/4 cup sun-dried tomatoes
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large cast-iron skillet over medium heat.
- Add sliced sausage and cook for 2-3 minutes per side until browned, then remove and set aside.
- Add minced garlic to the skillet and cook for 30 seconds.
- Pour in heavy cream, chicken broth, Italian seasoning, and Parmesan cheese. Whisk until bubbling and thickened.
- Add spinach and sun-dried tomatoes; simmer until spinach wilts.
- Return sausage to skillet and add zucchini noodles. Cook for 2-3 minutes until heated through.
- Season with salt and pepper before serving.
Notes
For extra flavor, sprinkle red pepper flakes before serving. You can customize by using different proteins or veggies.
