A delicious and healthy Keto-friendly dish featuring creamy Tuscan zucchini noodles and sausage, perfect for a quick weeknight meal.


Ingredients

Scale
  • 4 medium zucchini, spiralized
  • 2 links Kiolbassa sausage, sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cloves minced garlic
  • 1 teaspoon Italian seasoning
  • 1 cup fresh spinach
  • 1/4 cup sun-dried tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large cast-iron skillet over medium heat.
  2. Add sliced sausage and cook for 2-3 minutes per side until browned, then remove and set aside.
  3. Add minced garlic to the skillet and cook for 30 seconds.
  4. Pour in heavy cream, chicken broth, Italian seasoning, and Parmesan cheese. Whisk until bubbling and thickened.
  5. Add spinach and sun-dried tomatoes; simmer until spinach wilts.
  6. Return sausage to skillet and add zucchini noodles. Cook for 2-3 minutes until heated through.
  7. Season with salt and pepper before serving.

Notes

For extra flavor, sprinkle red pepper flakes before serving. You can customize by using different proteins or veggies.
