Instructions
- Preheat the oven to 425°F. Prepare two muffin tins by lining them with paper liners.
- Mix together the chopped peaches, dark brown sugar, cinnamon (if using), melted butter, and vanilla extract in a bowl. Spoon about two teaspoons into each muffin cup.
- Whisk together melted butter, dark brown sugar, Greek yogurt, and eggs. Add flour, baking powder, and salt, mixing until just combined. Fold in remaining peach mixture.
- Pour muffin batter into the tins, filling each cup. Add a spoonful of remaining peach mixture on top and swirl gently.
- Bake for 8 minutes at 425°F, then reduce to 350°F. Bake an additional 20-30 minutes until golden brown.
- Cool for 5 minutes, then remove from tins and enjoy warm or at room temperature!
