- 1 cup canned pumpkin puree
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup brown sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 2 large eggs
- ⅓ cup vegetable oil
- 1 tsp vanilla extract
- 4 oz cream cheese (softened)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, mix the pumpkin puree, eggs, vegetable oil, and vanilla until smooth.
- Gently fold the wet ingredients into the dry ingredients until just combined.
- In a small bowl, blend softened cream cheese with one tablespoon of sugar until smooth.
- Fill each muffin cup halfway with batter, add a dollop of cream cheese mixture in the center, then top with remaining batter.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean. Let cool slightly before serving.
