- 2–3 ripe bananas
- 2 cups old-fashioned rolled oats
- 1/2 cup nut butter (almond or peanut butter, or sunflower seed butter for nut allergies)
- 1/4 cup honey or maple syrup
- 1 teaspoon baking powder
- Pinch of salt
- Add-ins (chocolate chips, nuts, or dried fruit, such as walnuts and dark chocolate)
Instructions
- Preheat the oven to 350°F (175°C).
- Line an 8×8 inch baking dish with parchment paper.
- In a large mixing bowl, mash 2-3 ripe bananas until smooth.
- Mix in 1/2 cup of nut butter and 1/4 cup of honey or maple syrup until well combined.
- In another bowl, mix 2 cups of rolled oats, 1 teaspoon of baking powder, and a pinch of salt.
- Gradually combine the dry mixture with the wet ingredients and stir until fully incorporated. Fold in any add-ins if desired.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes, or until the edges turn golden brown and a toothpick comes out clean.
- Allow the bars to cool in the pan for about 10 minutes, then lift them out using the parchment paper and let them cool completely on a wire rack before slicing into squares.
