Homemade Apple Pie Squares | Elite Living Nutrition:

Delicious homemade apple pie squares, now they will please everyone and are simply irresistible with a nice cup of Irish tea.

Ingredients

  • ¼ cup (30 g) walnuts, chopped
  • ground cinnamon
  • 1 ½ tg. chai spice, store-bought or homemade (see note below)
  • Dry ingredients:
  • 1 ½ cups (190 g) white whole wheat flour
  • ½ cup (100 g) coconut sugar
  • ½ teaspoon of baking powder
  • ½ teaspoon of soda
  • 1 ½ teaspoons of chai spice
  • â…› teaspoon of salt
  • Wet ingredients:
  • 2 small apples, grated, moisture removed
  • 1 cup (250 g) unsweetened applesauce
  • 2 large eggs
  • 4 tbsp. Greek yogurt
  • 1 tbsp. vanilla extract
  • ½ cup (120 ml) unsweetened almond milk
  • ½ cup (120 ml) maple syrup
  • 2 tbsp. melted coconut oil
  • Frosting:
  • ½ cup (115 g) fat-free cream cheese, at room temperature
  • ½ cup (120 g) fat-free Greek yogurt, room temperature
  • 2 tbsp. maple juice

Instructions:

  1. Preheat oven to 350°F (180°C). Line an 8×12-inch cake pan with parchment paper.
  2. Place all dry ingredients in a large bowl and mix well. Put aside.
  3. In a separate bowl, add the wet ingredients, except for the coconut oil. Mix until well combined. Now fold the dry ingredients into the wet mixture.
  4. Finally, add the melted coconut oil to the cake batter and stir to combine. Pour the dough into the previously prepared pan and bake in the oven for 35 minutes.
  5. Meanwhile, place the ice cream ingredients in a bowl and beat with a hand mixer.
  6. When the cake is cooked and a toothpick inserted comes out clean, remove the cake from the oven and place it on a wire rack to cool completely. When cooled, layer the frosting on top. Garnish with ground cinnamon and walnuts.
