I have a lot of cookie recipes on this blog and on my Instagram, but the grain-free vegan chocolate chip cookie I’m sharing today is my new favorite.
Its rich texture and decadent nutty flavor are complemented by sweet chocolate chunks to satisfy the best sweet tooth.
And this delicious cookie couldn’t be easier to bake.
How to Make Grain Free Vegan Chocolate Chip Cookies
Made simply with almond flour, sugar-free sweetener, vanilla extract, optional nut butters, chia seeds, and dark chocolate, these toasted cookies are ready to enjoy in less than 30 minutes.
It is made by mixing the wet and dry ingredients until well combined, pouring the batter into the prepared pan, topping it with large chocolate chunks and baking for 20 minutes.
When you pull the pot out of the oven, you’ll be more than ready to dive right into the warm, melty goodness.

Grain Free Vegan Chocolate Chip Cookies

Preheat oven to 350 degrees F and grease a small cast iron skillet, set aside.
In a small bowl, whisk together the almond flour, sugar and baking powder. In another small bowl, whisk together the chia egg, nut butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until combined. Pour the batter into the prepared pan and press until evenly distributed.
Press the chocolate chips into the cookie dough. Place the pan in the oven and bake for 20 minutes. Remove from oven and serve HOT or let cool completely and remove from pan to store.
