Instructions

  1. Make the coffee syrup: Heat coffee, sugar, and cinnamon in a saucepan until sugar dissolves. Let cool.
  2. Prepare mascarpone mixture: Combine softened mascarpone, molasses, cinnamon, ginger, and nutmeg. Mix until smooth.
  3. Whip cream: Whip heavy cream with sugar until medium peaks form.
  4. Combine mixtures: Gently fold whipped cream into the mascarpone mixture.
  5. Layer ladyfingers: Dip ladyfingers in coffee syrup and arrange in a 9×13 inch pan.
  6. Add mascarpone layer: Spread one-third of the mascarpone mixture over the ladyfingers.
  7. Sprinkle gingersnaps: Add a layer of crushed gingersnaps.
  8. Repeat layers: Add more dipped ladyfingers, then another third of the mascarpone mixture.
