  • 1/2 sweet onion, diced
  • 2 garlic cloves, minced
  • 2 tablespoons grated fresh ginger
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper
  • 4 cups peeled sweet potato cubes (about 2 medium sweet potatoes)
  • 2 cups low-sodium vegetable stock
  • 1 14-ounce can coconut milk (full-fat or light)
  • 2 green onions, thinly sliced
  • 2 tablespoons hemp hearts
  • Extra coconut milk or cream (for drizzling)

Instructions

  1. Heat a large pot over medium-low heat and add the coconut oil. Add the diced onion and cook, stirring often, until it caramelizes and turns golden brown, about 15 to 20 minutes.
  2. Stir in minced garlic, grated fresh ginger, salt, and black pepper. Cook for an additional 5 to 6 minutes to release the flavors.
  3. Add the peeled sweet potato cubes to the pot. Cook for another 5 minutes, stirring occasionally, allowing the sweet potatoes to soften and develop a slight golden color.
  4. Pour in the low-sodium vegetable stock and bring the mixture to a boil. Reduce heat to a simmer, cover the pot, and cook for 15 to 20 minutes until the sweet potatoes are fork-tender.
  5. Turn off the heat. Use an immersion blender to puree the soup directly in the pot, or carefully transfer the mixture in batches to a blender. Blend until smooth and silky.
  6. Stir in the coconut milk and blend again or mix thoroughly until the soup is creamy and smooth.
  7. Return the soup to medium-low heat and warm through. Taste and adjust seasoning with additional salt and pepper if needed.
  8. Ladle the soup into bowls, drizzle with extra coconut milk or cream, and garnish with thinly sliced green onions and hemp hearts for added texture and flavor.
