Instructions
- Bring a pot of salted water to a boil and cook the cheese tortellini until al dente. Drain and set aside.
- Pat steak pieces dry with paper towels and season with salt and pepper.
- Heat olive oil in a cast iron skillet over medium-high heat. Sear steak bites in a single layer for 2–3 minutes per side until golden brown. Work in batches if needed. Remove steak and set aside.
- In the same skillet, reduce heat to medium and add butter. Once melted, add minced garlic and red pepper flakes. Cook for 1–2 minutes.
- Return the steak to the skillet and toss in garlic butter. Remove from heat and cover loosely.
- In a separate pan, melt 2 tablespoons butter. Add garlic and sauté for 1 minute.
- Stir in heavy cream and bring to a gentle simmer. Whisk in Parmesan cheese until smooth.
- Season sauce with garlic powder, salt, and pepper. Add spinach or sun-dried tomatoes if using.
- Toss the cooked tortellini in the sauce until evenly coated.
- Plate tortellini, top with steak bites, drizzle remaining garlic butter, and garnish with parsley and extra Parmesan.
