- 312 g (2 1/2 cups) all-purpose flour
- 6 g (1 1/4 tsp) baking powder
- 3 g (1/2 tsp) baking soda
- 4 g (3/4 tsp) kosher salt
- 226 g (1 cup) unsalted butter, room temperature
- 150 g (3/4 cup) granulated sugar
- 100 g (1/2 cup) light brown sugar, packed
- 1 large egg
- 1 large egg yolk
- 10 ml (2 tsp) pure vanilla extract
- 75 g (1/2 cup) rainbow jimmies (sprinkles)
- Optional: 30 g (1/4 cup) white chocolate chips
Instructions
- Preheat the oven to 175°C (350°F) and prepare two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a mixer, beat the butter with granulated and brown sugars until light and fluffy.
- Mix in the egg, egg yolk, and vanilla extract until just combined.
- Add the dry ingredients in two additions, mixing until no dry streaks remain.
- Fold in sprinkles and optional white chocolate chips gently.
- Scoop dough into balls and chill in the refrigerator for 10 minutes.
- Bake for 9-11 minutes or until edges are slightly golden.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For thicker cookies, chill the dough for 30-45 minutes before baking. Store cooled cookies in an airtight container for up to 4 days.
