Description

Fudgy Chewy Brookies are brownie-like cookies with crackly tops, chewy edges, and a rich fudgy center.


Ingredients

Scale
  • 8 oz semi-sweet chocolate (chopped — bar chocolate)
  • 1/2 cup unsalted butter (1 stick)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar (packed)
  • 3 large eggs (room temp helps whisking)
  • 1 tbsp vanilla extract
  • 3/4 cup all-purpose flour
  • 2 tbsp cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup chocolate chips
  • flaky sea salt
  • extra chocolate chips (press on top)
  • powdered sugar (light dusting)

Instructions

  1. Melt chopped chocolate and butter together until smooth. Cool 5 minutes.
  2. Whisk granulated sugar and brown sugar, then whisk in eggs one at a time until thick and glossy. Stir in vanilla.
  3. Whisk melted chocolate mixture into the egg mixture until shiny and fully blended.
  4. Fold in flour, cocoa powder, baking powder, and salt just until no dry streaks remain.
  5. Fold in chocolate chips.
  6. Cover and chill batter for 30 minutes.
  7. Scoop onto parchment-lined baking sheets, spacing 2 inches apart.
  8. Bake at 350°F (175°C) for 10–12 minutes until tops are crackly and edges set.
  9. Cool on the pan for 10 minutes, then move to a rack to finish cooling.

  • Chilling the batter helps achieve crackly tops.
  • Press extra chocolate chips on top before baking.
