  • 2 large onions, thinly sliced
  • 3 tablespoons olive oil
  • 2 teaspoons garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1/2 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste
  • 1 cup shredded Gruyère cheese
  • 1/2 cup shredded mozzarella cheese
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat. Add sliced onions and sauté until caramelized, about 15-20 minutes, stirring occasionally.
  3. Add minced garlic and fresh thyme to the skillet and cook for 1 minute until fragrant.
  4. Season chicken breasts with salt and pepper.
  5. Push the onions to the side of the skillet and place the seasoned chicken breasts in the center. Brown chicken on both sides for 3-4 minutes each.
  6. Pour beef broth and Worcestershire sauce over the chicken and onions.
  7. Sprinkle Gruyère and mozzarella cheeses evenly over the chicken and onions.
  8. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  9. Remove from the oven and let the dish rest for 5-10 minutes.
  10. Garnish with fresh parsley if desired and serve warm.
