Description

Ingredients

  • 1 cup powdered sugar
  • 1 tablespoon Captain Morgan Spiced Rum
  • ground nutmeg, as needed

Instructions

  1. In a large mixing bowl, cream together ¾ cup softened butter, granulated sugar, and light brown sugar until light and fluffy using a hand mixer or stand mixer. Beat in the egg and vanilla extract until fully combined.
  2. Gradually mix in the all-purpose flour and salt until just combined to form a soft dough. Avoid overmixing to keep the cookies tender.
  3. Using your hands, portion the dough into 28 small balls and place them evenly spaced on a baking sheet lined with parchment paper. Press your thumb into the center of each ball to create a well.
  4. Preheat the oven to 350°F (175°C). Bake the cookies for about 12 minutes or until the edges are lightly golden. Remove from the oven and let cool completely on a wire rack.
  5. In a small bowl, beat together ¼ cup softened butter, powdered sugar, and Captain Morgan Spiced Rum until smooth and creamy.
  6. Spoon or pipe the icing into each thumbprint well on the cooled cookies. Dust the tops lightly with ground nutmeg for added flavor and festive appearance.
  7. Allow the filling to set for a few minutes before serving. Store cookies in an airtight container to keep them fresh.
