Ingredients

  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • ⅓ cup light brown sugar (firmly packed)
  • 1 large egg (room temperature preferred)
  • 1 teaspoon vanilla extract
  • ¼ cup eggnog
  • 3 ⅓ cups cake flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ¾ teaspoon table salt
  • 3 cups powdered sugar (if sifting, sift after measuring)
  • 6 tablespoons eggnog

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Set it aside for later.
  2. In a large bowl or stand mixer fitted with a paddle attachment, beat the softened butter, granulated sugar, and light brown sugar on high speed for about 2-3 minutes until well creamed and fluffy.
  3. Beat in the large egg and vanilla extract until fully combined, then stir in ¼ cup of eggnog to incorporate into the dough smoothly.
  4. In a separate medium bowl, whisk together the cake flour, baking powder, baking soda, ground cinnamon, nutmeg, and salt until evenly combined.
  5. Gradually add the dry ingredients to the wet mixture in 3-4 additions, stirring well after each addition. Use a spatula to scrape the sides and bottom of the bowl to ensure all ingredients are incorporated thoroughly.
  6. Using a 1½ tablespoon scoop, portion out the dough onto the prepared baking sheet, spacing them evenly to allow for spreading.
  7. Place the baking sheet on the center rack of the preheated oven and bake for 10 minutes, or until the cookie edges are just beginning to turn a very light brown.
  8. Within a minute of removing the cookies from the oven, use the bottom of a measuring cup or similar tool to gently flatten the surface of each cookie to achieve the classic shape.
  9. Allow the cookies to cool completely on the baking sheet before adding the glaze.
  10. Combine the powdered sugar and 6 tablespoons of eggnog to create a smooth glaze to drizzle or spread over the cooled cookies for an extra festive touch.
