- ¼ cup Warm Eggnog
- 2 and ½ tablespoons Granulated Sugar

- 2 and ¼ to 2 and ½ cups All-Purpose Flour
- 3 tablespoons Unsalted Butter (melted)

- ¼ cup Light Brown Sugar (firmly packed)
- 1 and ½ tablespoons Ground Cinnamon
- 1 and ½ teaspoons Ground Nutmeg
- ¼ cup Unsalted Butter (melted, for topping)
- ¼ cup Light Brown Sugar (for topping)
- 1 teaspoon Ground Cinnamon (for topping)
- ¼ teaspoon Ground Nutmeg (for topping)
- ¾ cup Eggnog (for icing)
- 2 ounces Full Fat Cream Cheese
- 1 cup Powdered Sugar
- 2 tablespoons Eggnog (for icing)
- 1 teaspoon Vanilla Extract (for icing)
- pinch Salt (for icing)
Instructions
- Prepare the pan: Spray a baking dish with non-stick spray and set it aside.
- Activate the yeast: Place warm water in a bowl. Sprinkle yeast on top and whisk. Let rest for 10 minutes until bubbly.
- Mix the wet ingredients: Add eggnog, sugar, salt, vanilla, and egg to yeast mixture. Whisk to combine.
- Combine with flour: Gradually stir in flour. Use a stand mixer if desired, adding softened butter and remaining flour.
- Knead the dough: Turn out onto a floured surface and knead for 8-10 minutes until smooth. Let rest for 10 minutes.
- Prepare the filling: In a bowl, combine granulated sugar, brown sugar, cinnamon, and nutmeg. Whisk well.
- Roll it out: Roll dough into a rectangle. Brush melted butter over the surface, then sprinkle with cinnamon-sugar mixture.
- Form the rolls: Roll tightly from one long side, cut into 6 even slices.
- Let them rise: Place slices cut side down in the pan and allow to rise for 1 and ½ hours.
- Preheat the oven: Once risen, preheat oven to 350ºF (177ºC).
- Add the topping: Whisk melted butter, brown sugar, cinnamon, and nutmeg. Spoon over rolls, pour eggnog into dish.
- Bake to perfection: Cover with foil and bake for 25 minutes. Remove foil and bake an additional 5-8 minutes until brown. Cool for 15 minutes.
- Make the icing: Beat cream cheese until smooth. Add powdered sugar, eggnog, vanilla, and salt. Mix until creamy.
- Top and serve: Spread icing over slightly cooled rolls and serve immediately.
