  • ¼ cup Warm Eggnog

  • 2 and ¼ to 2 and ½ cups All-Purpose Flour
  • 3 tablespoons Unsalted Butter (melted)
  • 2 tablespoons Unsalted Butter (melted)
  • ¼ cup Granulated Sugar (for filling)
  • ¼ cup Light Brown Sugar (firmly packed)
  • 1 and ½ tablespoons Ground Cinnamon
  • 1 and ½ teaspoons Ground Nutmeg
  • ¼ cup Unsalted Butter (melted, for topping)
  • ¼ cup Light Brown Sugar (for topping)
  • 1 teaspoon Ground Cinnamon (for topping)
  • ¼ teaspoon Ground Nutmeg (for topping)
  • ¾ cup Eggnog (for icing)
  • 2 ounces Full Fat Cream Cheese
  • 1 cup Powdered Sugar
  • 2 tablespoons Eggnog (for icing)
  • 1 teaspoon Vanilla Extract (for icing)
  • pinch Salt (for icing)

Instructions

  1. Prepare the pan: Spray a baking dish with non-stick spray and set it aside.
  2. Activate the yeast: Place warm water in a bowl. Sprinkle yeast on top and whisk. Let rest for 10 minutes until bubbly.
  3. Mix the wet ingredients: Add eggnog, sugar, salt, vanilla, and egg to yeast mixture. Whisk to combine.
  4. Combine with flour: Gradually stir in flour. Use a stand mixer if desired, adding softened butter and remaining flour.
  5. Knead the dough: Turn out onto a floured surface and knead for 8-10 minutes until smooth. Let rest for 10 minutes.
  6. Prepare the filling: In a bowl, combine granulated sugar, brown sugar, cinnamon, and nutmeg. Whisk well.
  7. Roll it out: Roll dough into a rectangle. Brush melted butter over the surface, then sprinkle with cinnamon-sugar mixture.
  8. Form the rolls: Roll tightly from one long side, cut into 6 even slices.
  9. Let them rise: Place slices cut side down in the pan and allow to rise for 1 and ½ hours.
  10. Preheat the oven: Once risen, preheat oven to 350ºF (177ºC).
  11. Add the topping: Whisk melted butter, brown sugar, cinnamon, and nutmeg. Spoon over rolls, pour eggnog into dish.
  12. Bake to perfection: Cover with foil and bake for 25 minutes. Remove foil and bake an additional 5-8 minutes until brown. Cool for 15 minutes.
  13. Make the icing: Beat cream cheese until smooth. Add powdered sugar, eggnog, vanilla, and salt. Mix until creamy.
  14. Top and serve: Spread icing over slightly cooled rolls and serve immediately.
