Description

Soft, chewy brown sugar cookies that melt in your mouth, perfect for any occasion.


Ingredients

Scale
  • 300 g (2 1/3 cups) all-purpose flour
  • 220 g (1 cup, packed) light brown sugar
  • 170 g (12 tbsp / 3/4 cup) unsalted butter, melted and cooled slightly
  • 50 g (1/4 cup) granulated sugar
  • 1 large egg, at room temperature
  • 10 ml (2 tsp) vanilla extract
  • 1 tsp (5 g) baking soda
  • 1 tsp (5 g) fine sea salt
  • 12 g (1 tbsp) cornstarch
  • Optional: 100 g (3/4 cup) chocolate chips or chopped nuts

Instructions

  1. Combine the melted butter and sugars in a large bowl. Whisk until smooth, then stir in the egg and vanilla.
  2. Mix the dry ingredients in a separate bowl: flour, cornstarch, baking soda, and salt.
  3. Add the dry mixture to the wet mixture and fold until just combined. Fold in chocolate chips if desired.
  4. Cover and rest dough at room temperature for 15–30 minutes.
  5. Preheat oven to 175°C (350°F) and line baking sheets with parchment. Portion the dough into balls.
  6. Bake for 10–12 minutes, rotating halfway, until edges are golden and centers are slightly soft.
  7. Let cool on the baking sheet for 5 minutes then transfer to a cooling rack.

Notes

Be careful not to overbake; the cookies will firm up as they cool.
