These healthy low-fat Dubliner Cheese protein muffins are packed with goodness and super easy to make. I love these because you can make them in batches for a meal prep and they are so delicious! You can eat them for breakfast, lunch or as a post-workout snack as they are extremely high in calcium and protein. They make a great savory pick me up that is completely guilt free. 
Recipe – Makes 12
What you need.

6 large organic eggs

1 cup freshly grated
Dublin cheese a blend of white and red mature Dubliner Lighter (33% less fat)

1.5 cups of spinach

6 organic tomatoes, diced

3-4 cloves of garlic

a few fresh basil leaves

skimmed butter for the muffin tray

olive oil

What to do:

Preheat the oven to 180°C

Whisk the eggs in a jug or bowl until combined and evenly mixed, set aside

Finely chop the tomatoes and put them in a small bowl, add 2/3 cloves of garlic with fresh basil leaves, sprinkle with olive oil.

Stir this mixture and leave it in the refrigerator for 10 minutes to allow all the delicious flavors to combine well.

Grate the freshly grated Dubliner Cheese Lighter, set aside

Chop some spinach, set aside

Lightly grease each muffin tray with butter to prevent the muffins from sticking (very important)

Pour your tomato mixture (that you have refrigerated) evenly into each muffin.

Then do the same with the wilted spinach, layering evenly over the tomato mixture

Pour the egg mixture over each muffin tin until it is almost to the top/even

Top each muffin with a nice dollop of Dubliner Lighter Cheese

Season with salt and pepper

Put in the oven at 180°C for about 10-12 minutes, cook until the muffins turn golden brown.

Remove from the oven and carefully remove each muffin from the tray with a dessert spoon.

Place on a wire rack to cook for a few minutes and serve hot.
