Ingredients

- 250 g (2 cups) Ditalini pasta
- 60 ml (¼ cup) Olive oil
- 4 cloves Garlic, minced
- 500 ml (2 cups) Vegetable broth
- 240 ml (1 cup) Heavy cream
- 50 g (½ cup) Parmesan cheese, grated
- Fresh herbs (basil or parsley)
- Salt and pepper, to taste
Instructions
- Heat 60 ml of olive oil in a large pot over medium heat. Add 4 minced garlic cloves and sauté until fragrant, about 1 minute.
- Add 250 g of ditalini pasta to the pot, stirring to coat with oil. Pour in 500 ml of vegetable broth and bring to a boil. Cook uncovered for about 10 minutes, stirring occasionally.
- Stir in 240 ml of heavy cream and 50 g of grated Parmesan cheese. Cook for an additional 2-3 minutes until creamy.
- Season the pasta with salt and pepper to taste. Add freshly chopped herbs right before serving.
Notes
Store leftovers in an airtight container for up to 3 days. For best flavor, serve fresh. Can customize with seasonal vegetables or different herbs.
