  • 1/2 cup Granulated Sugar
  • 1 tsp Ground Cinnamon
  • 1/3 cup Butter, melted
  • 4 oz Cream Cheese, softened
  • 1/4 cup Powdered Sugar
  • 3/4 cup Canned Pumpkin Puree
  • 1/2 tsp Pure Vanilla Extract
  • 1 1/2 tsp Pumpkin Pie Spice
  • 1/2 cup Heavy Whipping Cream
  • 2 Tablespoons Powdered Sugar
  • 1/2 teaspoon Vanilla Extract
  • Chopped Pecans, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). In a shallow dish, combine 1/2 cup granulated sugar and 1 tsp ground cinnamon.
  2. Brush both sides of each tortilla with 1/3 cup melted butter. Immediately press each buttered tortilla into the cinnamon-sugar mixture, ensuring full coating.
  3. Drape coated tortillas over two rungs of an oven rack or an inverted muffin tin to create a taco shape. Bake for 8-10 minutes, or until golden brown and crisp. Let cool completely on a wire rack.
  4. In a large bowl, beat 4 oz softened cream cheese with 1/4 cup powdered sugar until smooth and lump-free. Scrape down sides of the bowl.
  5. Add 3/4 cup canned pumpkin puree, 1/2 tsp pure vanilla extract, and 1 1/2 tsp pumpkin pie spice to the cream cheese mixture. Beat until well combined and smooth.
  6. Pour in 1/2 cup heavy whipping cream, 2 tablespoons powdered sugar, and 1/2 teaspoon vanilla extract. Beat on medium-high speed for 2-3 minutes until the mixture is light, airy, and mousse-like.
  7. Cover the bowl and chill the pumpkin pie filling in the refrigerator for at least 30 minutes to allow flavors to meld and firm up.
  8. Once shells are cooled and filling is chilled, spoon about 2-3 tablespoons of filling into each crispy cinnamon-sugar taco shell.
  9. Garnish generously with chopped pecans. Serve immediately for optimal crispness.
  10. Store unfilled shells in an airtight container at room temperature. Store filling separately in an airtight container in the refrigerator for up to 3 days. Assemble just before serving.
