  • ⅓ cup Sea Salt Flakes
  • 2 teaspoons Fennel Seeds
  • 2 cups Parsley Leaves
  • 1 cup Sage Leaves
  • ¼ cup Rosemary Leaves
  • 3 cloves Garlic
  • ¼ cup Extra Virgin Olive Oil
  • 20 pieces Baby Parsnips
  • 2 cups Unsweetened Almond Milk
  • Cracked Black Pepper

Instructions

  1. Score the Pork: Using a small sharp knife, carefully score the pork skin lengthwise at 1 cm intervals, then score diagonally. Rub 2 tablespoons of sea salt flakes onto the skin and refrigerate uncovered for 2–3 hours to help it crisp up.
  2. Mix the Herbs: In a small bowl, combine fennel seeds with the remaining salt. In another medium bowl, blend parsley, sage, rosemary, garlic, and 2 tablespoons of olive oil until well mixed. Set it aside for later use.
  3. Preheat the Oven: Preheat your oven to 220°C (425°F). Brush off the salt from the pork and pat it dry with a paper towel to eliminate excess moisture, ensuring a great seal for that crispy skin.
  4. Herb Spread: With the pork skin-side down, generously spread the herb mixture over the pork. Roll it tightly to enclose the filling and secure it with kitchen string. Brush the skin with the remaining olive oil and rub the fennel salt mixture deeply into the scores you made earlier.
  5. Prepare the Parsnips: In a large roasting dish, combine the parsnips, almond milk, and cracked black pepper at the base. Place the seasoned pork on top of the parsnips. Roast in the oven for 25 minutes to start that beautiful roast.
  6. Lower the Temperature: After 25 minutes, reduce the oven temperature to 200°C (400°F) and continue roasting for an additional 55–60 minutes. You’re looking for that golden, crackled skin and fully cooked pork.
  7. Rest Before Serving: Once done, let the roast rest for about 10 minutes before slicing. This lets the juices redistribute, ensuring a succulent bite every time!
  8. Optional: Garnish with fresh herbs before serving for an extra pop of color!
