Description
Crispy Garlic Thyme Roasted Mushrooms are a flavorful side dish made with chestnut, shiitake, and oyster mushrooms. They are seasoned and oven-roasted to crispy perfection.

- 400 grams chestnut mushrooms (about 1 lb)
- 200 grams shiitake mushrooms (about 1/2 lb)
- 200 grams oyster mushrooms (about 1/2 lb)
- 8 tablespoons olive oil
- 1 teaspoon black pepper
- 0.5 teaspoon salt
- 3 cloves garlic
- 5 sprigs fresh thyme
Instructions
- Set your oven to 200°C (400°F) and allow it to fully preheat.
- Thoroughly wash all mushrooms by rubbing them gently to remove any dirt. Drain well using a colander, then thinly slice each variety.
- Lay the sliced mushrooms in a single layer on a baking sheet lined with parchment paper. Drizzle the olive oil evenly over the mushrooms, then sprinkle with black pepper and salt.
- Place the baking sheet in the preheated oven and roast for 20 minutes. Drain off any excess liquid, then flip each mushroom slice.
- Roast for an additional 20 minutes, or until they are evenly golden brown.
- When the mushrooms are about 5 minutes away from being perfectly browned, sprinkle over the thinly sliced garlic and fresh thyme. Roast for the final 5 minutes.
- Remove from the oven and garnish with additional garlic slices and thyme if desired. Serve hot.
