Description

Crispy Garlic Thyme Roasted Mushrooms are a flavorful side dish made with chestnut, shiitake, and oyster mushrooms. They are seasoned and oven-roasted to crispy perfection.


Ingredients

Scale
  • 400 grams chestnut mushrooms (about 1 lb)
  • 200 grams shiitake mushrooms (about 1/2 lb)
  • 200 grams oyster mushrooms (about 1/2 lb)
  • 8 tablespoons olive oil
  • 1 teaspoon black pepper
  • 0.5 teaspoon salt
  • 3 cloves garlic
  • 5 sprigs fresh thyme

Instructions

  1. Set your oven to 200°C (400°F) and allow it to fully preheat.
  2. Thoroughly wash all mushrooms by rubbing them gently to remove any dirt. Drain well using a colander, then thinly slice each variety.
  3. Lay the sliced mushrooms in a single layer on a baking sheet lined with parchment paper. Drizzle the olive oil evenly over the mushrooms, then sprinkle with black pepper and salt.
  4. Place the baking sheet in the preheated oven and roast for 20 minutes. Drain off any excess liquid, then flip each mushroom slice.
  5. Roast for an additional 20 minutes, or until they are evenly golden brown.
  6. When the mushrooms are about 5 minutes away from being perfectly browned, sprinkle over the thinly sliced garlic and fresh thyme. Roast for the final 5 minutes.
  7. Remove from the oven and garnish with additional garlic slices and thyme if desired. Serve hot.
