- 4 boneless, skinless chicken breasts
- Salt and pepper (to taste)
- 1 cup all-purpose flour
- 2 large eggs (beaten)
- 1 cup breadcrumbs (preferably panko for extra crunch)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Oil (for frying)
- For the Topping:
- 2 cups marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- Fresh basil leaves (for garnish)
Instructions
- Place each chicken breast between two sheets of plastic wrap and pound to an even thickness (about 1/2 inch) using a meat mallet or rolling pin. Season both sides with salt and pepper.
- Set up three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, grated Parmesan cheese, garlic powder, oregano, and basil.
- Dip each chicken breast first into the flour, shaking off the excess, then into the beaten eggs, and finally into the breadcrumb mixture, pressing gently to adhere.
- In a large skillet, heat about 1/2 inch of oil over medium-high heat until hot (about 350°F/175°C).
- Carefully add the breaded chicken breasts to the skillet, cooking in batches if necessary. Fry for about 4–5 minutes on each side, or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.
- Preheat your oven to 375°F (190°C).
- In a baking dish, spread a thin layer of marinara sauce on the bottom. Place the fried chicken on top, then spoon additional marinara sauce over each piece. Sprinkle shredded mozzarella cheese on top.
- Bake in the preheated oven for 15–20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with fresh basil leaves, and serve hot over pasta or with a side salad.
