- 4 cups sliced yellow squash
- 1 medium onion, chopped
- 2 large eggs
- 1 cup grated cheddar cheese
- 1 cup milk
- 2 tablespoons butter
- ¼ teaspoon cayenne pepper (optional)
- ½ teaspoon kosher salt
- ½ teaspoon ground black pepper
- 1 sleeve Ritz crackers, crushed
Instructions
- Preheat your oven to 350º F (175º C) to prepare for baking the casserole.
- In a medium skillet or sauté pan over medium-low heat, melt 2 tablespoons of butter. Add the sliced yellow squash and chopped onions and cook until they are tender, about 7-10 minutes, stirring occasionally to prevent sticking.
- In a large mixing bowl, lightly whisk the eggs. Then add the grated cheddar cheese and milk, whisking until well combined. Incorporate the cooked squash and onions into this egg mixture by stirring well.
- Melt the remaining 2 tablespoons of butter in the skillet previously used for the vegetables. Pour the melted butter into the squash mixture. Add cayenne pepper if desired, along with kosher salt and ground black pepper. Stir everything until fully combined.
- Spray a 9×13 inch casserole dish with cooking spray. Pour the squash mixture evenly into the prepared dish. Top the casserole with an even layer of crushed Ritz crackers.
- Place the casserole in the preheated oven and bake for 45 minutes, or until the top is lightly browned and the center is set.
- Remove the casserole from the oven and allow it to rest for about 3 minutes before serving.
