Creamy One Pot Cajun Chicken Linguine with Garlic Parmesan Sauce

- 1 lb boneless, skinless chicken breasts (sliced into strips)
- 8 oz linguine pasta
- 2 tablespoons Cajun seasoning (adjust to taste)
- 2 tablespoons olive oil
- 4 cloves garlic (minced)
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper (to taste)
- Fresh parsley (chopped, for garnish)
Instructions
- In a bowl, toss the sliced chicken breasts with Cajun seasoning, salt, and pepper until evenly coated.
- In a large pot or skillet, heat the olive oil over medium-high heat.
- Add the seasoned chicken to the pot and cook for about 5-7 minutes, or until the chicken is cooked through and no longer pink. Remove the chicken from the pot and set aside.
- In the same pot, add the minced garlic and sauté for about 30 seconds, until fragrant.
- Pour in the chicken broth and bring to a boil.
- Add the linguine pasta and cook according to package instructions, stirring occasionally, until al dente (about 8-10 minutes).
- Once the pasta is cooked, reduce the heat to low. Stir in the heavy cream and grated Parmesan cheese, mixing until the cheese is melted and the sauce is creamy.
- Add the cooked chicken back to the pot and mix until everything is well combined. Adjust seasoning with salt and pepper to taste.
- Serve the creamy Cajun chicken linguine hot, garnished with chopped fresh parsley. Enjoy!
