A deliciously creamy, low-carb Italian sausage soup that’s perfect for weeknights and meal prep.

- 1 lb Italian sausage
- 1 medium onion, chopped
- 2–3 cloves garlic, minced
- 3 cups bone broth
- 1 can diced tomatoes
- 2 small zucchinis, diced
- 4 oz cream cheese
- 2–3 cups chopped spinach
- Herbs: basil, oregano, bay leaf
- 1 pinch cayenne pepper
- Salt & pepper to taste
Instructions
- Prep your ingredients (5–8 minutes): Chop onion, mince garlic, dice zucchinis, and chop spinach.
- Brown the sausage (6–8 minutes): Heat the pot, add oil, and brown the sausage.
- Sauté aromatics (2–3 minutes): Add onion to the pot, sauté until translucent, then add garlic.
- Build the broth (3 minutes): Pour in bone broth, add diced tomatoes, herbs, and cayenne, then bring to a boil.
- Emulsify cream (3–4 minutes): Blend cream cheese with a cup of broth until smooth, then stir into the pot.
- Add vegetables & finish (2–3 minutes): Stir in zucchini, simmer, then add spinach until wilted.
- Rest and serve (2 minutes): Remove bay leaf and let soup rest before serving.
Notes
For a thicker soup, blend 1-2 cups and return to pot. Optional add-ins include mushrooms or heavy cream.
