Description

A simple yet decadent creamy garlic parmesan chicken pasta that is perfect for weeknight dinners.


Ingredients

Scale
  • 250 g (2 cups) fettuccine or penne pasta
  • 350 g (12 oz) chicken breast, cut into bite-sized pieces
  • 4 cloves garlic, minced
  • 240 ml (1 cup) heavy cream
  • 100 g (1 cup) grated parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare all your ingredients ahead.
  2. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8–10 minutes. Reserve 120 ml (½ cup) of pasta water, then drain and set aside.
  3. Sauté the chicken: In a skillet, heat olive oil over medium-high heat. Add diced chicken, season with salt and pepper, and cook until golden brown and cooked through, about 5–7 minutes. Remove from the skillet and set aside.
  4. Cook the garlic: In the same skillet, reduce heat to medium, add minced garlic and sauté until fragrant, about 1 minute.
  5. Make the sauce: Pour in heavy cream and stir to combine with garlic. Bring to a simmer and thicken slightly, about 2–3 minutes.
  6. Combine pasta and chicken: Return the chicken to the skillet, toss in the cream sauce, add reserved pasta water and parmesan cheese, stirring until the cheese melts. Mix in the drained pasta until evenly coated.
  7. Serve: Taste and adjust seasoning. Garnish with chopped fresh parsley before serving.

Notes

Avoid overcooking the pasta for best texture. Can be made ahead; sauce can be prepared in advance.
