Instructions

  1. In a medium saucepan, combine rich eggnog and cornstarch, whisking until smooth over medium heat. Stir for about 5 minutes until it thickens.
  2. Gradually stir in sugar, cinnamon, and nutmeg into the warm mixture. Cook on medium heat, whisking for 5-7 minutes until thick.
  3. Lower heat and mix in melted butter, vanilla extract, and dark rum, cooking for 1-2 minutes until flavors meld.
  4. For a firmer consistency, whisk in powdered pectin while simmering on low for another 1-2 minutes.
