- 680 g (1.5 lb) boneless, skinless chicken breasts or thighs
- 120 g (1/2 cup) mayonnaise
- 120 g (1/2 cup) sour cream
- 60 ml (1/4 cup) heavy cream
- 1 tbsp (15 ml) Dijon mustard
- 1 tbsp (15 ml) lemon juice
- 60 g (1/2 cup) finely diced celery
- 30 g (3 tbsp) thinly sliced green onions
- 15 g combined (2 tbsp) chopped parsley and chives
- 1 small clove garlic, minced
- 1–1½ tsp kosher salt (adjust to taste)
- 1/4 tsp black pepper
- 8 slices of sturdy sandwich bread or 4 brioche buns
- 15–30 g (1–2 tbsp) butter or olive oil for toasting
Instructions
- Poach the chicken: Place the chicken in a saucepan and cover with cold water or chicken broth. Bring to a gentle simmer and poach until the thickest part reads 74°C (165°F), about 12–15 minutes. Remove and rest for 5 minutes before shredding.
- Shred the chicken with two forks or in a food processor, about 6–8 quick pulses. Season with salt and pepper to taste.
- Make the creamy sauce: In another bowl, whisk together mayonnaise, sour cream, heavy cream, Dijon, lemon juice, and minced garlic until smooth. Season with salt and pepper.
- Combine the shredded chicken with the sauce, celery, green onions, and herbs. Chill for 20–30 minutes to let flavors meld.
- Toast the bread: Brush with butter or oil, and toast in a skillet until golden or in the oven at 190°C (375°F) for 6–8 minutes.
- Assemble the sandwiches: Divide the filling among bread slices, add extras like herbs or tomatoes, and serve immediately.
Notes
For a lighter version, swap half the mayo for Greek yogurt. For a dairy-free option, use an oil-based aioli and avocado.
