- 1 cup Icing sugar
- 1 cup Plain flour
- 1/2 cup Unsalted butter
- 1 large Egg
- 3 large Egg yolks
- 1 tablespoon Calamansi zest
- 1/2 cup Freshly squeezed calamansi juice
- 1 can Sweetened condensed milk
- 1 teaspoon Vanilla extract
- 1 tablespoon Calamansi liqueur or Cointreau (optional)
- 1 pinch Big pinch of salt
- 1 cup Icing sugar (for dusting)
- 1 cup Mini meringue kisses (for topping)
Instructions
- Preheat the Oven to 350°F (180°C) and prepare a baking tin.
- Mix the Crust ingredients and press into the baking tin.
- Bake the crust for 25-35 minutes until golden brown.
- Prepare the filling by whisking egg and yolks, then add filling ingredients.
- Pour the filling over the baked crust and bake again for 15-20 minutes.
- Cool the pan at room temperature, then chill in the fridge for 2 hours.
- Slice into bars, dust with icing sugar, and serve.
