Description

Zesty Creamy Calamansi Bars: A Tropical Treat to Love. These Creamy Calamansi Bars offer a delightful balance of sweet and tangy flavors, perfect for any dessert lover.


Ingredients

Scale
  • 1 cup Icing sugar
  • 1 cup Plain flour
  • 1/2 cup Unsalted butter
  • 1 large Egg
  • 3 large Egg yolks
  • 1 tablespoon Calamansi zest
  • 1/2 cup Freshly squeezed calamansi juice
  • 1 can Sweetened condensed milk
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Calamansi liqueur or Cointreau (optional)
  • 1 pinch Big pinch of salt
  • 1 cup Icing sugar (for dusting)
  • 1 cup Mini meringue kisses (for topping)

Instructions

  1. Preheat the Oven to 350°F (180°C) and prepare a baking tin.
  2. Mix the Crust ingredients and press into the baking tin.
  3. Bake the crust for 25-35 minutes until golden brown.
  4. Prepare the filling by whisking egg and yolks, then add filling ingredients.
  5. Pour the filling over the baked crust and bake again for 15-20 minutes.
  6. Cool the pan at room temperature, then chill in the fridge for 2 hours.
  7. Slice into bars, dust with icing sugar, and serve.
