- 4 skinless, boneless chicken breasts
- 8 ounces brie cheese
- 1 cup fresh cranberries
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1/4 cup orange juice
- Salt and pepper to taste
- Panko bread crumbs for topping
- Optional: Spinach or arugula
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium saucepan, heat olive oil and cook the cranberries until they begin to burst. Stir in honey, orange juice, and spices.
- Cut pockets into the chicken breasts and stuff with brie and cranberry mixture. Secure with toothpicks.
- Sear the chicken in an oven-safe skillet until golden brown, about 3-4 minutes on each side.
- Top the chicken with panko and bake for 25 minutes or until the internal temperature reaches 165°F (74°C).
Notes
You can customize by adding spinach or other cheeses. Make sure to allow the chicken to rest before serving.
