Description

Ingredients

  • 4 skinless, boneless chicken breasts
  • 8 ounces brie cheese
  • 1 cup fresh cranberries
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1/4 cup orange juice
  • Salt and pepper to taste
  • Panko bread crumbs for topping
  • Optional: Spinach or arugula

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, heat olive oil and cook the cranberries until they begin to burst. Stir in honey, orange juice, and spices.
  3. Cut pockets into the chicken breasts and stuff with brie and cranberry mixture. Secure with toothpicks.
  4. Sear the chicken in an oven-safe skillet until golden brown, about 3-4 minutes on each side.
  5. Top the chicken with panko and bake for 25 minutes or until the internal temperature reaches 165°F (74°C).
